Cucumber Mint Mocktail: A Refreshing Twist for St. Patrick's Day Festivities

It's time for ALL THE GREEN THINGS! Hahaha. But srsly. And, wouldn't ya know...green is my favorite color! So no pinching. (But I don't need to tell a bunch of adults that anymore, do I?)

While celebrating this year, you could grab a green beer or some neon-colored nonsense that looks like a radioactive spill and you end up looking like this guy...

Instead, enjoy this refreshing non-alcoholic drink during your St. Patrick's Day festivities and feel and look years younger...and way less hairy.


And don't mind me - I'll be sipping on this drink while I watch "Darby O'Gill and the Little People" and let King Brian get wasted and ridiculous while I stay stone-cold sober and rock at life. And y'all...this gold nugget of retro goodness is something I grew up on and is my favorite Sean Connery movie. That's right - above "Indiana Jones and the Last Crusade." If you've never had the pleasure of watching the leprechauns and their hi-jinks at super speed, you are MISSING OUT. (I'd share some of the super fun still from the pic here, but it's a Disney movie and I ain't messin' with their copyright laws. Just trust me and go watch it.)


Ingredients

  • 6 ounces of chilled club soda

  • 1 cup cucumber cut into chunks, plus a few thinly sliced for garnish

  • 12 mint leaves plus more for garnish

  • 2 tablespoons beet sugar (or regular sugar - I don't recommend palm sugar or other darker sugars)

  • ¼ cup fresh lemon juice

  • 2 drops Lemon Vitality essential oil

  • 2 drops Citrus Fresh Vitality essential oil

  • Ice

Cool Cucumber Mint Mocktail with Essential Oils

Instructions

  1. Grab your blender and combine the cucumber chunks, mint, sugar & lemon juice until pureed to a smooth texture.

  2. Fill two glasses with ice and place the thinly sliced cucumbers throughout. Add 2 ounces of club soda to each glass, filling each 1/3 full with the cucumber mixture you just blended, adding one drop of each Vitality oil to each glass. Add another third of the puree and top with club soda. Stir well, but gently, before serving.

  3. Garnish with fresh mint.

It's a green drink for all ages!
